Visit the "My Friend's Favorite Resources" page and read up a little on the different third-party certifications that provide additional reassurance to the Celiac Community. I find these additional GF seals/labels comforting in my everyday challenge to remain safe from gluten contamination. You can find these pantry products by clicking on them, going to your everyday supermarket, or online. Also, when you are first diagnosed with Celiac Disease, please see a physician who can check your labs and continue to follow you annually. The doctor/practitioner will monitor your labs throughout your journey to be sure you are getting proper nutrition and if you need supplementation. A diet filled with fruits, vegetables, fish, meat, potatoes, eggs, rice, quinoa, buckwheat, nuts, and seeds is all naturally gluten-free if prepared safely in a gluten-free environment (scroll down for more info). Just like with all meals, the cooking practices should be addressed by the person preparing the food. Always let them know you have Celiac Disease and cannot have any gluten that is found in wheat, rye, barley, brewer's yeast, malt, triticale (a hybrid of wheat and rye), and oats that are not pure.
Also, these pantry items are GF and Certified Gluten-Free but always double-check that the Gluten-Free label/seal is still there. Products change over time. Lastly, check in with yourself, how do I feel after eating this? Despite the under 20ppm FDA regulation, everyone is different, and if it doesn’t feel right to you then do not continue eating that product despite any label.

Many Republic of Tea Teas are GFCO Certified. Always look for the GFCO label on the back of the package to confirm. The representative I reached out to stated: "Every one of our great tasting, premium teas and herbs are gluten free. The Republic of Tea was the first tea company permitted to include the Gluten-Free Certification Organization's certification mark on our signature packaging. *THE FLOUR MIXES ABOVE ARE ALL GOOD. THEY ARE ALL VERY SIMILAR IN MY OPINION AND HAVING ANY ONE OF THESE IN YOUR PANTRY IS GOOD TO HAVE AS A SUBSTITUDE TO ANY REGULAR GLUTEN FLOUR. * ALSO, BOB'S RED MILL GF. ALL ARE GREAT. THESE COMPANIES ALSO HAVE GREAT COOKIE, CAKE, BROWNIE MIXES. THEY ARE EASY, DELICIOUS, AND WILL MAKE YOUR DAY.
*TIPS: Use cooking spray (see below) to prep your surface, you may need to add more liquid if the batter is too think. I prefer milk, or almond milk, but any liquid to thin out or extra mix to thicken the batter before it goes on the pan or into waffle maker. GLUTEN FREE flour absorbs a lot more liquid, therefore needing more to make the perfect batter. I prefer to use my Cuisinart for pancakes, or Breville for waffles, but I used a regular frying pan for pancakes for years before investing in these kitchen gadgets, and it is just fine.
Tip: Boil salted water, once boiling add the pasta. You have to stir often, so it does not stick, so stay by the pasta and watch/stir it. Refer to the box for timing. Enjoy it right after cooking with butter or sauce. I HAD LUCK WITH ALL OF THESE. I FOUND THEM AT BIG Y, STOP&SHOP TOO, SO CHECK OUT YOUR LOCAL STORES AND LOOK FOR THESE ITEMS. THESE COMPANIES ALSO CARRY OTHER PRODUCTS THAT ARE GREAT. I LOVE ESPECIALLY SCHAR FOR COOKIES, CRACKERS AND MORE.

Certified GF means that there is a seal of approval for 20ppms or less of gluten as per FDA. For companies to place a gluten-free logo they have to follow the FDA's protocol, many with Celiac disease may feel better at lower levels of ppms and would prefer further certifications. Below I named additional third-party companies that certify products 15ppms, 10ppm, and 5 ppms or under. These products with gray/white background are Gluten Free per FDA recommendations unless you see those other official certified gluten-free logos and seals we do not know exactly how many ppms, just that it is under 20ppm.
Naturally Gluten-Free Food
Gluten can be found in spices, marinades, sauces, soups, or unintentionally added through cross-contamination and/or in cooking practices. When a meal is to be prepared check in with the chef first. Inform them of your dietary restriction to gluten-found wheat, rye, barley, brewer's yeast, malt, triticale (a hybrid of wheat and rye), and oats that are not pure.
Fruits and vegetables are all naturally gluten-free. They are safe as long as they are not contaminated with gluten.
Fish and meat are naturally gluten-free. Be mindful not to marinate in gluten and use gluten-free ingredients when preparing.
Eggs are naturally gluten-free. When prepared watch for cross-contamination.
Rice is naturally gluten-free. Be mindful not to add gluten.
Buckwheat is naturally gluten-free
Quinoa is naturally gluten-free.
Nuts and Seeds are naturally gluten-free. When you purchase them still check the labels as companies can add gluten additives.
While most plain cheeses are gluten-free, many have added ingredients that will change and make them unsafe and glutened. I always read the labels for cheese. Shredded cheese often has starch or cellulose that may or may not be gluten-free. I look for the Gluten-Free label and check the ingredients. I had luck with Cabot shredded cheese.
